Ingredients

  • 750 gms / 3 Pao Arbi / Colocasia Roots
  • 8 - 9 finely chopped Garlic Cloves
  • 3 - 4 finely chopped Green Chillies
  • 3 tablespoon Besan
  • 2 teaspoon Dhania / Coriander Powder
  • 1/2 teaspoon Ajwain / Carom Seeds
  • 1/2 teaspoon Red Chilli Powder
  • Salt to taste
  • Oil for Shallow fry
  • Fresh Coriander leaves for Garnishing
  • Pinch of Hing / Asafoetida

INSTRUCTIONS

  1. Take a Pressure cooker and put Arbi & 1 ½ glass of Water into it and give 1-2 whistles (check arbi till they are cooked)
  2. Drain the water & peel of the skin
  3. Cut the arbi in 2 pcs (vertically) and take each arbi in your hands & lightly press it
  4. Keep the arbi in fridge for 15-20 mins
  5. Take besan in plate & add little salt and mix well
  6. Roll each arbi into the besan and keep it aside
  7. Take a Pan & add oil to Shallow fry the Arbi till they are Golden brown
  8. Filter the oil & take another pan, add 2-3 tablespoon oil and put the flame on sim
  9. Add chopped garlic and saute for a minute
  10. Add Ajwain, Hing, Dhania Powder, Red Chilli Powder, Salt to taste (please note that you put salt in accordance as we have already added some amount of salt in the starting of the preparation) & chopped Green chillies
  11. Mix well and add 2-3 tablespoon (Small) of water, so that the masala can easily mix with arbi
  12. Add fried arbi and mix it well
  13. Put the arbi into a bowl & Garnish with some fresh coriander leaves and Serve hot
