Masala Baigan

MASALA BAINGAN / BRINJAL

INGREDIENTS:

  • 500 gms Baingan (Lamba) / Brinjal
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Haldi / Turmeric Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Black Pepper / Kali Mirch Powder
  • Pinch of Amchoor (Mango) Powder
  • Salt to taste
  • Oil for Cooking

 

INSTRUCTIONS:

  1. Wash the baingan properly and cut from the center and then rotate cut from the center again
  2. Masala for Stuffing : In a small bowl, add Red Chilli Powder, Haldi, Kali Mirch / Black Pepper Powder, Garam Masala, Amchoor / Mango Powder & Salt and mix well
  3. Stuff the masala in the slits made in each baingan
  4. Heat oil in Kadai, add stuffed Baingans and fry for 2-3 minutes on high flame. Then sim the flame and cook for 20 – 25 mins or till the time Baingans are cooked. Keep turning the Baingans after every 5 mins.
  5. Add remaining masala and mix well, cook for 1-2 mins
  6. Serve hot with Roti/Parathas
