ALOO BAINGAN / BRINJAL

Recipe Type: Lunch / Dinner

Preparation Time: 15 mins

Cooking Time: 25 mins

Serves: 4

 

INGREDIENTS:

  • 500 gms Baingan (Lamba) / Brinjal
  • 2 – 3 medium sized Aloo / Potatoes (cut into long pieces)
  • ½ teaspoon Red Chilli Powder
  • ½ teaspoon Haldi / Turmeric Powder
  • ½ teaspoon Garam Masala
  • ½ teaspoon Black Pepper / Kali Mirch Powder
  • Pinch of Amchoor (Mango) Powder
  • Salt to taste
  • Oil for Cooking

 

INSTRUCTIONS:

  1. Wash the baingan properly and cut from the center and then rotate cut from the center again
  2. Masala for Stuffing : In a small bowl, add 1 teaspoon of Red Chilli Powder, Haldi, Kali Mirch / Black Pepper Powder, Garam Masala, ½ teaspoon Amchoor / Mango Powder & Salt and mix well
  3. Stuff the masala in the slits made in each baingan
  4. Heat oil in a Pan/Kadai, once the oil is Luke warm (so that spices are not burnt), add Red Chilli Powder, Haldi, Salt, Stuffed Baingans & Potatoes pieces, mix well and cook for 20-25 mins on low flame or till the time Baingan aloo are well cooked (Put masalas only for Potatoes as Baingans are already stuffed)
  5. Add Kali Mirch / Black Pepper Powder, Garam Masala, Amchoor & mix well (Only for Aloo)
  6. Serve hot with Roti/Parathas

    Was a great hit when I prepared this dish with slight modifications here and there.apart from what mentioned by Bhawna, I added dhaniya seeds , savory leaves just a little, pepper powder and simply cut the brinjal and potatoes in cubes and cooked in very low flame for around 20-25 mins. Thanks dear for the tasty recipe.
