BAINGAN BHARTA

Ingredients

Baingan / Eggplant 1 Big or 2 Small sized
Onions chopped 3 medium sized
Tomatoes finely chopped / Grated 6 medium sized
Ginger chopped or long slices 1 teaspoon
Green Chillies sliced in 2 pieces or chopped 2 - 3
Red Chilli Powder (Kashmiri irch for color) 1/2 teaspoon
Black Pepper / Kali Mirch Powder 1/2 teaspoon
Garam Masala Powder 1/2 teaspoon
Salt to taste
Oil for cooking
Fresh Coriander leaves for Garnishing

Recipe Type : Lunch / Dinner

INSTRUCTIONS:

  1. Cook/Roast the Baingan directly on the flame till it is completely cooked from all sides & inside
  2. Peel off the skin of Baingan & keep it side
  3. Heat oil in Pan / Kadai, add Onions, Ginger and sauté till the onions are light brown
  4. Add Red Chilli Powder, Garam Masala, Salt to taste, Green Chillies & mix well
  5. Immediately add Tomatoes, Baingan and mix well and cook for 10-12 mins, switch off the flame and add Kali Mirch / Black Pepper Powder, Garam Masala, mix well
  6. Garnish the Bharta with Fresh Coriander leaves & serve hot with Chapati / Paratha / Rice
