Ingredients

Brinjal / Baingan 250 gms
Poppy Seeds 4 teaspoon
Mustard Oil 4 tablespoon
Nigelle Seeds/Kalongi ¼ teaspoon
Haldi/Turmeric Powder 1 teaspoon
Red Chilli Powder 1/2 teaspoon
Salt to taste
Green Chilly slits 2
Green Chilly 2
Curd/Yogurt 4 teaspoon
Sugar 1/4 teaspoon
Garam Masala ¼ teaspoon
Fresh Coriander leaves for garnishing

Baingan Posto is a Bengali dish. It’s Brinjal Curry with Poppy seeds paste. Served with Rice or Roti.

Directions

  1. Wash the Brinjals and cut into long slices
  2. Marinate the Brinjals with 1/2 teaspoon Haldi & Salt, keep it aside
  3. Take curd in a bowl, then add 1/2 teaspoon Haldi, Salt, Red Chilli Powder, Sugar, mix all the ingredients and make a smooth paste (Curd Masala) out of it
  4. Make Paste (Khus Khus Paste) of Poppy seeds with Green Chillies
  5. Heat 2 teaspoon of mustard oil in a Pan and stir fry the marinated brinjal in it, and keep it aside
  6. In the same Pan, add 2 teaspoon of Mustard oil, add Kalonji & cook for few seconds, then add Khus Khus Paste, mix them well and let it fry for 2 mins, add curd masala in the paste
  7. When the masala is prepared then add fried brinjal in it, mix well
  8. Add Half cup of Water and clit cut chillies in it, cook for 3-4 mins on low flame
  9. Add Garam Masala in it and mix well
  10. Posto curry is ready, garnish with Fresh Coriander Leaves and serve with Rice or Roti
