CHICKEN KATHI ROLL

Ingredients

Wraps 6
Marinated Chicken (Boneless pieces) 300 gms
Eggs 2
Onion big sized sliced in long pieces 1
Tomato big sized finely chopped 2
Ginger Paste 1 teaspoon
Garlic Paste 1 teaspoon
Salt to taste
Turmeric Powder / Haldi 3/4 tespoon
Cumin / Jeera 3/4 tespoon
Coriander/Dhaniya Powder 1 teaspoon
Red Chilli Powder 1 teaspoon
Oil for Cooking

Directions

  1. You need to make masala (for the filling) + marinated chicken (this was already marinated where I got from) + wraps
  2. Masala – Slice 2 big onions and put in a heated pan with oil. Sauté till they are brown. Put 1 spoon each of garlic and ginger paste. Then put 2 tomatoes (finely chopped) into the mix and stir till tomatoes turn mushy. Add Spices (Turmeric + Cumin + Coriander + Red chilli + Salt) and sautee/stir for another 2-3 mins and your masala will be ready
  3. Next step – Cook the marinated chicken and make sure pieces are small (chicken tikka bite sized)
  4. I made the chicken first so that the oil left had some flavour and I used that to cook the onions and the masala for extra flavour.
  5. Now the final part is the wrap
  6. Beat Eggs and keep the batter on the side. Take a fresh wrap and put it on the stove and gently spread the batter on the top side.
  7. Once the batter on the top has settled (not fluid anymore), flip the wrap and spread the batter on the other side. Flip the wrap 1-2 times till the egg coating has settled on the wrap
  8. Put the wrap in a plate, add masala, add chicken pieces and serve hot with fresh mint chutney 😊😊😊😊😊😊
